I'm So Lucky

Cameron reminds me on a nearly daily basis "you're so lucky." Like I'm lucky he's my husband, he's so awesome, he's so great, etc. But he tells me just as often, "I'm so lucky." So it's OK.

So, one of the MANY reasons I am so lucky is because Cameron is an amazing cook. I wanted to use my blog to 1. Brag about him, and 2. To share a recipe he recently tweaked and made his own. It was....

So, here's the recipe:


Honey Mustard Chicken Tenders
Honey mustard is always a must with chicken tenders in our house. For that reason, it is shocking to me that I never thought to combine the two before cooking. That’s right, these crispy lovelies are marinated in honey mustard dressing for a couple of hours so that the tender chicken soaks up all the sweet tangy flavor of the dressing. Then, like my sriracha chicken nuggets, these little devils are coated in panko bread crumbs so that they crisp up very nicely in your oven, not your fryer.
I started making my own honey mustard dressing a little while ago. It is so simple and you probably have all of the ingredients on hand right now. All you need is: mayonnaise, mustard, vinegar, honey and salt and pepper. Simply whisk all of them together and viola! Honey Mustard dressing. Pretty easy huh? And since we can never get enough honey mustard flavor, I suggest making a little extra for dipping the chicken tenders in.
Serves 4
You will need:
  • 1/2 cup mayonnaise
  • 2 tablespoons prepared yellow mustard
  • 1/2 teaspoon garlic powder
  • 1 tablespoon vinegar
  • 2 tablespoons honey
  • salt and pepper to taste
  • 1 1/2 pounds chicken tenders, rinsed and pat dry
  • 1 cup panko bread crumbs
  • 1 cup plain bread crumbs
  • 1 tablespoon olive oil
  1. Whisk together mayonnaise, mustard, garlic, vinegar and honey. Season to taste with salt and pepper.
  2. Place chicken tenders in a bowl and pour honey mustard over the top. Turn to coat. Cover and refrigerate for 2 hours.
  3. After the chicken has marinated, preheat oven to 400 degrees and spray a cooling rack with non-stick spray. Place cooling rack on top of baking sheet and set aside.
  4. Combine panko and plain bread crumbs in bowl. Remove the chicken from the mariande and let excess drip off. Dredge in the bread crumb mixture to coat completely. Place on prepared baking sheet, drizzle with olive oil and bake for 20 – 25 minutes. Turn on the broiler and broil for 3 minutes or until browned.
  5. Serve.

But instead of bread crumbs he used PRETZELS. If it sounds weird to you, I PROMISE it isn't. Try it. You wont be sorry. 
So, basically just follow this recipe but crush up pretzels and dip the chicken in that instead of bread crumbs.

Happy Birthday......

November 10th-11th was all about me. And Cameron. And the Marines. But mostly I focused on the "me" part. ;) 

You see, even though my Birthday was on November 3rd, we were in Utah celebrating Morgan and Calvin's wedding, so my parents and sister Tara came down to celebrate my birthday with me this weekend. But they were also there so that my dad could help set Cameron apart as our new Ward Executive Secretary. So it was kind of about Cameron. And it was the birthday of the Marines, so we celebrated them a tiny bit too. :) 

It was such a wonderful weekend. It was nice to have my family there to visit. The weekend went by so fast, but I was so focused on having fun that I didn't worry about the impending Monday blues. 

The weekend started off with a football game. Those of you who know me might be wondering why someone so blatantly non-sporty would want to go to a football game, but it was SDSU against Airforce and I love having a team to root for!

We went to this really interesting organic restaurant for breakfast. It was super yum! 



If you couldn't tell already, Cameron is participating in "No Shave November." You know, it's all about ending Prostate Cancer (?)

Compliments to the chef/bbq-er (my dad) Mom made the salad, I made the potatoes, and Cameron and Tara BOTH made me a cake. It was magnificent.

Sunday

My parents and Tara had to leave after church so it was a short trip. But I am so so glad they came. 
Here's Tara and I before church. We traded clothes as per usual. I wish I lived next door to Tara so I could wear her adorable clothes every day. 

I blew out a scented candle for my bday cakes since we didn't have any bday candles. It worked ;)

It would have been enough that they just came down and spent time with us, but my parents also got me a BLENDER for my birthday! It's a Ninja and it is a blender/food processor. Cameron and I make smoothies a lot and we have pretty much killed Cameron's baby blender. There have also been quite a few times since being married that we have needed a food processor for a recipe and we didn't have one. SO NOW WE DO! Thanks mom and dad for the blender and food and fun! I am so grateful for you guys!

MORGAN + CALVIN RUSSELL

Cameron and I just got back from Utah (again). This time we went for Morgan's wedding to Calvin Russell. Morgan is one of my best friends in the whole world and I am SO SO grateful Cameron and I were able to make it for the wedding. Honestly, I wouldn't have missed it for the world. I would have hitchhiked if I had to. 

We left early Thursday morning and started back for home on Sunday morning so our trip was really fairly short, but we packed in all the fun we could into those few days. CLASSIC TREEHOUSE (where my friends and I lived together during college) STYLE!

I am VERY proud to say that I did ALL of the Treehouse girls' makeup for their weddings. First Maureen trusted me to do her makeup for her big day then Allison, Angie, and Morgan after her. So fun.

This picture is for my sister, Tara. When our friend KD got married I took a picture just like this with her bouquet (bet you didn't know that, did you KD?). Tara called it my "Bride Envy" picture. Well, here's another one to add to the list.

I love friendship. It's so interesting how you can see in our rings how different we all really are. All of us with very different tastes and personalities. We all bring something different to the table. It all just works. It fits. I love it. I just feel so blessed to have a group of girls in my life who are so wonderful, understanding, supportive, fun, and kind.


When Allison got married we went to Disneyland a couple of days before. In every picture Allison would make sure that her ring was showing. Here's Morgan continuing the tradition.

It was the BEST trip. I had to fall asleep the second we got in the car on the way home so I wouldn't spend the whole trip home bawling because I was leaving my best friends in Utah and coming back to San Diego where...lets be totally honest...I have no friends.

This is Halloween.....Round 2

Halloween....

This year Cameron had class and I had work until right before our ward Halloween Party so we weren't going to go....until we found out that there was free food....so we decided to go ;) #poorcollegestudents #hashtaggedonmyblog

Cameron and I were both going to be Cowboys, but at the last minute I decided to be an Indian. My mom told me that these days it's probably politically incorrect to be an Indian. Oops...cause I was also an Indian at my school the next day. Hopefully I didn't offend anyone. 






No Indian costume is complete without Moccasins....and the best thing about these mocs is that I bought them at DISNEYLAND! :)
