Easter 2014


We had such a lovely day!We enjoyed our quiet little holiday so much. I can't wait til next year when Nathan is big enough to do the whole "Easter Basket" thing. But I did enjoy playing "Easter Bunny" for Cameron. I can't help it. Its in my blood. I love it so much. 
As it was I did get some really cute pics of Nathan in these bunny ears. After I took these pictures Cameron apologized to Nathan, telling him that some day he wouldn't have to put up with letting mommy take dorky pictures of him. 

I let Cameron know that I had a good 5 years-at least-until he would think that it was dorky. I'm going to take advantage of the time I have.   

I know I am biased, but seriously he is the cutest thing I have ever seen!

We got ready for church in our special Easter outfits. Big shout out to Grandma Kathy who bought Nathans ADORABLE little Easter outfit for him. I can't get enough of him in that little button up shirt and his little Mocs from Aunt Callie. 

Nathan WOULD NOT look at the camera. Cameron tried so hard to distract him at get him to look forward but every time Cameron sat back down he would look to the side. Oh well. He still looks cute! 

After church we had our friends Wes and Nichole Mallett over for a potluck-style Easter dinner and then we played Disney Trivia. I PRETTY much was dominating the whole time and then Nichole came up from behind and won! I tell you what though...I'm pretty much a Disney genius. 

It was such a wonderful day. I am so grateful for my Savior. Because of him and his sacrifice I have an eternal family, my life has purpose, and I am able to change and become a better person every day.

Strawberry Poppyseed and Bacon Chopped Salad

We had a delicious and very summery meal the other day and I thought I would share the recipe. It is SUPER easy and really really delicious. 

Not all of the ingredients are super healthy and since I am STILL trying to get rid of this blasted pregnancy weight I did a couple of things ( add bread to the side...oops) to make it a little more healthy:
-fat free feta (tastes just as good as regular)
-turkey bacon (I am a huge fan of turkey bacon so this wasn't a huge sacrifice for me)
-cut the sugar in the dressing in half and add more strawberries. You might want to add some honey or something if you like a very sweet dressing. I just didn't want so much sugar going into my body. Salad is supposed to be good for you.)

Strawberry Poppyseed and Bacon Chopped Salad

Serves: 4
  • 6 cups chopped romaine lettuce
  • 2 cups strawberries, chopped
  • 8 strips bacon, cooked and crumbled
  • ½ red onion, diced
  • 1 cup crumbled feta cheese
  • 1 teaspoon garlic, minced
  • 1 teaspoon diced red onion
  • ⅓ cup sugar
  • ⅓ cup white vinegar
  • ¼ cup strawberries, chopped
  • ½ cup olive oil
  • ¼ teaspoon salt
  • 1 tablespoons poppyseeds
  1. In a large bowl toss together chopped lettuce, strawberries, bacon, and red onion. In a food processor or blender, add all dressing ingredients and pulse 1-2 minutes until smooth. Pour dressing over salad and top with crumbled feta cheese. Enjoy!

Spring Break 2014

Spring Break on the Central Coast

The last two weeks have been full of so much excitement!! Last week was Cameron's Spring Break so we loaded up what felt like our entire apartment (umm....seriously packing for trips is SO much more complicated when you have a baby) and headed for the Central Coast. 

It was such an amazing week, especially because Nathan and I don't really see Cameron very much because usually he is working AND going to school, but last week we had him ALL. TO. OURSELVES. It was amazing. 

Our week started with going to Brent and Mette's (my cousins) baby Claira's blessing in Camarillo. Claira is so beautiful and perfect. I was so happy to meet her and to spend a glorious day surrounded by family.

I kept trying to tell Nathan that Grandpa Dean isn't THAT scary! He didn't believe me. He kept doing this pouty lip thing that he had never done before. (The kid should have seen the man when I was a child--he's a kitten compared to then! ;))

The sibs--The four of us haven't been together in far too long since Cameron and I missed Christmas this past year. It was so nice to be together before our "baby" Callie goes off to Grad School in Nebraska. I love these people so much.

Monday was Callie's birthday, so we celebrated by going to sushi!

Baby Nathan was not a fan of sushi, the restaurant, that it was past his bedtime by the time we finished, or the fact that his sweater was covered in drool and was making him cold. The rest of us enjoyed ourselves immensely.  
We had such an amazing week.

I love my baby, but it was a welcome break to be able to do things like eat and bathe without listening to a crying baby. I loved seeing my sweet boy bonding with my family. Makes me wish we lived closer :( 

Highlights of our trip:

-Because we will be home for a couple of months this summer, Cameron decided that while we were home we should plant a garden so that we could enjoy fresh veggies while we are there over the summer. I can't wait to go back and see it grown!

-Spent lots of time entertaining this little guy:

-Spent mornings hanging out with Grandad. I even got the LUXURY of going to the gym with my dad a few times. I felt so wild and adventurous! ;)

-Bath time in Grandma and Grandad's big bath! Nathan LOVED swimming around in the bathtub each night. Normally we bathe him in a baby bath so he was feeling like Michael Phelps in the big bath!

-Farmers Market with cousins! We had a blast hanging out with Uncle Joe, Tiana, Cousin Ava, and Cousin Luke at Farmers Market in SLO. I can't wait til Luke and Nathan are a little bigger and are running around playing together just like Tiana and I did growing up.  

-Watching General Conference
As members of the Church of Jesus Christ of Latter-Day Saints my family is able to listen to inspirational talks from our church leaders semi-annually. As always I felt so uplifted and motivated from the messages I heard.

 -Nathan had fun playing in his new Bumbo (thanks, grandma!) and looking at all of the beautiful things to see on the ranch.

-Bonding with Aunt Callie. This kid LOVES his Aunt Callie (as you can tell because of his cheek-splitting smile)

Cameron left on Sunday and Baby Boy and I stayed with my parents until Wednesday and we were lucky enough to have my mom come down and spend a few days with us this week in San Diego.

Cameron taught me how to surf today. It was SO hard and SO tiring, but SO fun! (maybe next time I will actually be able to stand up on both feet without face-planting it!)
